Can I pull 200 feet of 32 pound copper with a regular offshore board?

Yes for sure, you can pull any copper off any planer board. The issue is, how far the board can pull the copper out away from the back of the boat. You want your boards running at a 45 degree angle away from the boat, or more. If they drag too far back your divers and every fish you hook will immediately swim up into it and get tangled.
Personally, no we would not recommend it if you can avoid it, but yes it can work. Our recommendation would be a Dreamweaver Ninja, Large Offshore, or Church TX-44.

No crankbait has the ability to drag copper down at all. It can dig only in relation to the length of leader, but it will not move the copper. This has been verified and tested
Since you guys troll 2.7 MPH or higher on Lake Michigan, why not publish the depth rates at THAT speed? Even 3.0 MPH would be more useful to Salmon fishermen, if you were to pick only one speed.

Great question! Because 99% of guys troll at 2.5 or less, they don’t think it’s possible to catch fish fast and don’t understand the concept of covering water faster to find active fish. They have their eyes glued to some perceived magical down speed (and temp), something they read on Facebook or heard at seminar once and they literally CRAWL down the lake, sitting in dead water for miles in most cases changing lures as much as possible with expectations of changing the minds of negative fish they are marking on their screens.
Are you measuring speed at MPH if not how do you convert GPS to MPH

GPS Speed over Ground is measured in MPH on your chartplotter
